It is mainly composed of capsanthin (C40H56O3), capsorubin (C40H56O4) and yellow pigment. It has bright color and high color value. It has strong coloring power and good color retention. Studies have proven that capsicum red pigment also has the effect of regulating body fat metabolism, immunity, anti-radiation and reducing the incidence of certain types of cardiovascular diseases.<\/p>\n\n\n\n<p>&nbsp;Capsicum red pigment is widely used as a coloring agent and is listed as a Class A pigment by the Food and Agriculture Organization of the United Nations (FAO) and the World Health Organization (WHO). According to my country&#8217;s GB 2760-2014 &#8220;Standards for the Use of Food Additives&#8221;, capsicum red pigment can be used in food, sauces, ice cream, ice cream, biscuits, cooked meat and other products.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><a href=\"https:\/\/www.backvita.com\/ja\/\u88fd\u54c1\/paprika-extract\/\">Capsicum red pigment<\/a> extraction<\/h2>\n\n\n\n<p>&nbsp;Appropriate extraction methods can reduce the content of orange and yellow substances and non-pigment components in capsicum pigments, thereby increasing the proportion of capsanthin and capsorubin and increasing the color value. Judging from the current extraction methods of capsicum red pigment, the common ones include solvent extraction, ultrasonic extraction, microwave-assisted extraction and supercritical fluid extraction.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Solvent extraction method<\/strong><\/h3>\n\n\n\n<p>&nbsp;\u6eb6\u5a92\u62bd\u51fa\u306f\u3001\u30ab\u30d7\u30b5\u30f3\u30c1\u30f3\u304c\u6709\u6a5f\u6eb6\u5a92\u306b\u6eb6\u3051\u308b\u3053\u3068\u3092\u5229\u7528\u3057\u305f\u3001\u4e00\u822c\u7684\u306a\u30ab\u30d7\u30b5\u30f3\u30c1\u30f3\u306e\u62bd\u51fa\u65b9\u6cd5\u3067\u3042\u308b\u3002\u5177\u4f53\u7684\u306a\u62bd\u51fa\u65b9\u6cd5\u306f\u3001\u6210\u719f\u3057\u305f\u4e7e\u71e5\u5510\u8f9b\u5b50\u3092\u53e9\u3044\u3066\u7c89\u672b\u306b\u3057\u305f\u5f8c\u3001\u30a8\u30bf\u30ce\u30fc\u30eb\u3001\u30a2\u30bb\u30c8\u30f3\u306a\u3069\u306e\u6709\u6a5f\u6eb6\u5a92\u3068\u6df7\u5408\u3057\u3066\u5510\u8f9b\u5b50\u30aa\u30ec\u30aa\u30ec\u30b8\u30f3\u3092\u8abf\u88fd\u3057\u3001\u84b8\u7559\u3001\u5206\u96e2\u306a\u3069\u306e\u4e00\u9023\u306e\u624b\u9806\u3092\u7d4c\u3066\u3001\u6700\u7d42\u7684\u306b\u30ab\u30d7\u30b5\u30f3\u30c1\u30f3\u8d64\u8272\u8272\u7d20\u3092\u5f97\u308b\u3002<\/p>\n\n\n\n<p>&nbsp;\u6eb6\u5a92\u62bd\u51fa\u6cd5\u306e\u5927\u304d\u306a\u5229\u70b9\u306f\u3001\u4f4e\u30b3\u30b9\u30c8\u3067\u3001\u5b9f\u65bd\u306b\u9ad8\u4fa1\u3067\u9ad8\u5ea6\u306a\u8a2d\u5099\u3092\u5fc5\u8981\u3068\u3057\u306a\u3044\u3053\u3068\u3067\u3042\u308b\u3002\u6b20\u70b9\u306f\u3001\u62bd\u51fa\u3055\u308c\u305f\u30ab\u30d7\u30b5\u30f3\u30c1\u30f3\u306e\u7d14\u5ea6\u304c\u5341\u5206\u3067\u306a\u304f\u3001\u6709\u6a5f\u8a66\u85ac\u306e\u6b8b\u7559\u7269\u304c\u591a\u3044\u3053\u3068\u3067\u3042\u308b\u3002\u73fe\u5728\u3001\u30c8\u30a6\u30ac\u30e9\u30b7\u8d64\u8272\u7d20\u3092\u751f\u7523\u3057\u3066\u3044\u308b\u56fd\u5185\u5916\u306e\u30e1\u30fc\u30ab\u30fc\u306e\u307b\u3068\u3093\u3069\u304c\u3053\u306e\u65b9\u6cd5\u3067\u62bd\u51fa\u3057\u3066\u3044\u308b\u304c\u3001\u5f90\u3005\u306b\u6dd8\u6c70\u3055\u308c\u308b\u50be\u5411\u3082\u898b\u3089\u308c\u308b\u3002<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">\u00a0<strong>Ultrasonic extraction method<\/strong><\/h3>\n\n\n\n<p>&nbsp;The principle of the ultrasonic extraction method is to use ultrasonic waves to crush the peppers more finely, so that the components in the peppers can be better integrated in the extraction solvent, and finally obtain capsicum red pigment with higher purity. Ultrasonic extraction method has similarities with solvent extraction method, but it is faster, more efficient and lower cost than solvent extraction method. At this time, it is highly resistant to light and heat. However, after extraction, light, heat, oxygen, pH and metal ions will degrade it. After degradation, the olefin bond will be converted into a single unit. The bond may be broken, causing the conjugated structure to be destroyed, and the reason for fading is that photocatalytic oxidation and hydrolysis rearrangement reactions occur
